Fall is the perfect time of year for baking. The weather is getting chilly and fall ingredients like pumpkin and squash are in season. The amount of fall baking options are endless. However, many students have trouble taking advantage of the season due to small dorm kitchens. Despite limited options, this recipe for pumpkin muffins defies dorm difficulties. Within 20 minutes, students can have delicious pumpkin muffins to enjoy.
Here’s what you’ll need:
-1 box of yellow cake mix
-3 eggs
-1/2 cup of vegetable oil
-1 tsp baking soda
-2 tsp cinnamon
-1 can of 15 oz pumpkin
-Frosting of your choice
-No-stick spray
Other baking tools needed:
Cupcake pan, can opener, spatula and a mixing bowl
Mix together until the ingredients becomes a thick paste with a light orange color. Then fill each cup with the mix. Remember: the more mix put into each cup, the bigger the muffin.
